If I draw a closed shape around some pushpins, and if more than one type (ie dataset) of pushpin is within the closed shape, and then do Export to Excel, the resulting spreadsheet contains one worksheet per pushpin type. Is there any way to change that so that the Excel sheet is just a single list of pushpin data, instead of multiple lists?
In general, how can I control more of what the spreadsheet looks like?

In general, you can't. You'd heve to do custon coding (COM add-in, maybe) to
create a function that created a custom spreadsheet.
