I want to use the import wizard to map the address of my offices. i want to change the option of "Map Records to: City" to "Map Records to: Address 1". this is in the first window of the wizard on the bottom gray box.

I think you're under the impression that you can only map an address on one field, but in reality, the wizard pane that you are referring to should be used to indicate to MapPoint what type of data is held in each of the fields in your database. In other words, select City for the field that holds the city info for your data, Address1 for the first address line, etc. MapPoint will map your data as accurately as it can - if it will use as much of the information as it can to get a very accurate match.
